I have been so bloated from all the parties and rich foods of the holidays. I am looking for lean proteins, good complex carbs, low fat foods, and lots of fresh vegetables. I haven't been getting enough protein so I really loaded it up for dinner last night. I have a mixture of cooked grains mixed with fresh carrots, celery, cabbage and green onions dressed with a bit of rice vinegar. Lean chicken from the deli counter of the supermarket. And eggs! Yes, eggs. Notice they are quite pale? I used one whole egg and 3 egg whites to make these tasty, fluffy, light but packed with protein scrambled eggs. It was very satisfying.
I have been inspired by Biggie over at Lunch in a Box with all her wonder healthy bento box foods. So I jumped on the bandwagon. I had forgotten that my dear wife had purchased some Japanese lunch boxes a while ago. I took them out of storage and put them to use. You can see some leftovers here. There's some of my seaweed and mushroom soup, fresh vegetables, more deli chicken breast and leftover cooked grain salad. Thanks Biggie! Now I just have to make time to prepare more. I was scrambling this morning to get this together.

That looks like a nice lunch (bento) container with separate compartments. I was thinking about getting a bento lunch kit a while ago but I never got around to it. I usually just toss all of the leftovers that need to be heated in one container and the rest in another for lunch at work.
Nice job there Greg. I eat scrambled eggs with more egg whites too. I have been trying to be more concious to eat simple, healthy foods for the same reason, but my family has been sabotaging my plans by cooking lots (mom) and taking me to nice rastuarants (sis). :-) But fortunately, I've been going to the gym, so at least there is that to balance it all out :-)
How coincidental! I was inspired by the bentos on soy and pepper and yesterday the little medic and I got some compartmentalised lock'n'lock boxes (the next best thing to a bento I suppose)!
Lovely looking grain salad. I'm definitely going to experiment with omelettes too - nilmandra's green bean one on soy and pepper looks interesting. I'm not sure about the egg whites. Does it taste good? I can't help associating them with starving Californian celebrities (obviously it hasn't quite taken off over here).
You have a thermal bento! *envy* I want one of those but they are so expensive on eBay. I'm going to look for them while on holiday in Singapore.
that is one thing i admire on japanese bentou boxes..the idea of preparing lunch boxes beautiful in the eyes and tasty in mouth..i do prepare my hubby's bentou everyday too..that way its more economical and healthy too!!! :-)
Miss Bliss, the eggs do taste good. I usually add a splash of non-fat milk, salt and pepper and whip it up until the eggs are frothy. When I cook them, I add some water to the pan and cover it to help fluff and steam the eggs. It gives them a light texture.
I love my bento box. I don't know where my wife originally purchased them. I packed another similar one for lunch today. I should try to make some eggs to serve on the grains. You know, Asian style where the cooked egg omelette is sliced into thin strips? Yum.
